Delicious Plant Based Waffles Recipe Oil Free, Dairy Free (Vegan)

Everybody loves a good waffle with some fresh local or seasonal fruit and a dash of sweet and pure maple syrup. If you have been searching for truly vegan, gluten free, dairy free delicious and nutritious waffles search no more! This is a favorite recipe my husband and I love to eat and enjoy sharing. Its also a bulk recipe designed to make enough for the whole family, freeze and enjoy as you pop a few in the toaster through your busy week. Our recipe is simple, easy and fun and will surely make you smile guilt free. Enjoy!


Ingredients for Michelle's Bulk Cooking Vegan Gluten Free Waffle Recipe.
Makes approx 32 toaster-sized waffles


You will need the following for Michelle's Vegan Waffle Recipe.

3 Cups Oat Flour
1.5 Cups Millet (I don't rec quinoa flour because of the flavor but in small increments maybe if you prefer that)
6 teaspoons Baking Powder
1 teaspoon salt (pink, sea, or regular)
Egg replacer (follow instructions for 2-3 eggs) or use 1/2 Cup Tapioca Flour
1 teaspoon Cinnamon (optional) & perhaps a few shakes of pumpkin spice (optional)
2 Tablespoons ground flax seeds (optional)
1/4 Cup Chia Seeds (optional) let swell up for about 10 minutes in a half cup water
1/2 Cup Apple Sauce (unsweetened)
3 Cups Nut or Bean Milk of choice (soy, almond, etc)
2.25 Cups REAL 100 Percent Pure Maple Syrup (add more or less to your desire of sweetness)
2 Tablespoons Vanilla Extract (I prefer Madagascar or Massey Brand because cheap vanilla extract doesn't give the flavor I prefer)



*Mix dry ingredients together in a mixing bowl. Mix well.

*Mix wet ingredients together in a separate bowl and mix well.

*Now transfer wet ingredients to dry ingredients and turn on the mixer for a few minutes. Don't over mix. A few minutes is sufficient.

*Stop mixing and be sure to scrape inside the sides and bottom of the mixer to make sure everything is incorporated well and turn on the mixer again for a few minutes.

*Taste waffle mixture. You may add fresh or partially thawed/frozen blueberries to the mix now or leave plain and opt for fresh fruit with cooked waffles later.

*If the mix is to your liking go ahead and pour onto waffle maker. The trick to getting both sides to cook in most waffle makers is to hand flip them to make sure both sides cook evenly. They will usually cook more on one side. This allows them to get a little stiffer for storage and for popping into the oven or toaster. I don't own a toaster but have a small mini toaster oven and they toast great!

*If you taste anything bitter in the mixture add more maple syrup until taste resembles a muffin. Not too sweet and not too bitter at all. More on the sweet side. If you taste a grainy bitter taste add more apple sauce or maple syrup.

*If your mixture becomes too thick add liquid (water or nut milk) in small increments tablespoon by tablespoon and blend.

*If the mixture is too thin wait 10 minutes and then pour into your waffle maker griddle. If you ever accidentally drop too much liquid in simply add more flour. Another alternative is to mix in 1 tablespoon Coconut Flour. It soaks up liquid fast without changing the overall flavor of the recipe.

Storing. Once you pour and make all the waffles, you can date and bag into zip locks and freeze for the coming weeks! They stay fresh for months. Mine have never lasted longer than 2 months so not sure long term. But they taste so good, I doubt you and your family will make it past a few weeks!

Waffle Topping Options

Coconut Whip Cream, Coconut, Strawberries, Blackberries, Raspberries, Bananas, Blueberries, Apple Sauce, Jam, Cooked Fruit and Maple Syrup over stovetop (makes great berry syrup). Nut Butters. There's no end. You can even add ice cream int he middle and make a dessert with the waffles!
